Many will be surprised to see our spring lamb launch at this time of year, so we asked our head Farm Shop butcher, Giles, for a little lesson on the lambing season.
"Our lambs are born in spring as nature intended, so they are able to live happily outside in our beautiful free-range farmland. The term 'spring lamb' started as a campaign run by farmers in Australia and New Zealand, which has created the misconception in the UK that all lamb is to be enjoyed at Easter-time."
